There is a new trend emerging in food and nutrition domain in India. Eat Natural. Eat Raw. 🙂 Like last 100 years, this too is blind mimicry of the west.

To me, it is like employing illiterate to do specific skilled job. Or expecting spiritual discourse from animals.

It is simply impossible for a subject to justify the task given, without grooming him/her for the job and lack of conducive environment.

Similarly, cooking is a critical process of making raw food सुसंस्कृत (grooming). Denial of cooking processes forever is not a wise decision.

And so I prefer: Follow local food cooked by local methods. Wherever you are!

For example: तड़का

तड़का is important for certain type of food. छौंक जिसे तड़का (पश्चिमी भाग) या बघार (दक्षिणी भाग) भी कहते हैं, मुख्यत: भारत, पाकिस्तान और बांग्लादेश में विभिन्न व्यंजनों को पकाने में प्रयोग की जाने वाली एक विधि है। छौंक लगाने में घी या तेल को गर्म कर उसमें खड़े मसाले (अथवा पिसे मसाले भी) डाले जाते हैं ताकि उनमें समाहित सुगंधित तेल उनकी कोशिकाओं से निकल कर, उस व्यंजन जिसमें इन मसालों को मिलाया जाना है, को, उसका वो खास स्वाद प्रदान कर सकें। छौंक को किसी व्यंजन की शुरुआत या फिर अंत में मिलाया जा सकता है।

शुरुआत मे लगे छौंक में अमूमन खड़े मसालों के साथ साथ पिसे मसाले और नमक भी मिलाया जाता है जबकि अंत में लगे छौंक में अक्सर खड़े मसाले ही डाले जाते हैं। शुरुआत में लगा छौंक अक्सर सब्जी पकाने में प्रयोग किया जाता है, जबकि दाल, सांबर आदि व्यंजनों में इसे अंत में मिलाया जाता है।

This is not just to make food tasty as above wikipedia paragraph says! It is essential संस्कार for the food.

Mainly this तड़का संस्कार is needed for protein rich food like dal(s) and fresh vegetables. They both can disturb Vayu (Air movements in body) in our body. disturbed Vayu is the biggest cause of sickness. There are more than 120 sicknesses due to Vayu derangement. To avoid this, तड़का is critical. (Fermented food like Dhokla, Idli without Tadka is not good for health!)🙂 ) (Even when you are eating last day’s chapati(s), you crush it, do तड़का and mix it chapati crush (वघारेली भाखरी). This is to avoid increased Vayu of stale food)

And this is specifically for Tropical region like ours! In Europe, you can eat raw Salad! But since our dietitians and doctors are trained by European textbooks, they also prescribe RAW Food! What a mental slavery! Salad is not for hot humid India! All PIZZA joints now sell Salads 😛 and we eat it too! 😉 (Y)
