Modern Science

Mango contains 20+ Vitamins and many micro-nutrients.

One cup of diced mango contains 100 calories, 1 gram protein, 0.5 grams fat, 25 grams of carbohydrate (23 grams of sugar and 3 grams of fiber), 100% of the daily need for vitamin C, 35% for vitamin A, 20% of folate, 10% of vitamin B-6 and 8% of vitamin K and potassium.2

Mangoes also contribute copper, calcium and iron to the diet as well as antioxidants such as zeaxanthin and beta-carotene.

Many of these micro-nutrients are either water-soluble or fat-soluble. Healthy fat is necessity. Without it, vital nutrients, not limited to fat soluble vitamins (A, D, E, K), cannot be transported to the cells. Ghee provides the transport vehicle to it i.e .FAT.

So if you are eating too many mangoes but without ghee…you hardly get benefits of Vitamin rich ripen mangoes.

Ayurveda

Due to Summer, our digestion fire is already low. And to digest mango, we need enough digestion fire. Ghee helps here.

Pitta and fire are inter-related. Usually, the substances that balance Pitta, also cause depletion of digestion fire. But ghee is an exception. It balances Pitta Dosha but it increases digestion strength.
However, it does not help in Ama (altered digestion and metabolism condition). In a normal person, if digestion strength is a bit low, then ghee is useful in improving his digestive capacity.
Ghee is quite similar to milk in qualities, but unlike milk, ghee improves digestion. (Bhava Prakasha)

2. Sonth (सोंठ)

Dry ginger is unctuous, promoter of digestion, aphrodisiac, hot in potency, balances Vata and Kapha, sweet in Vipaka, cardio- tonic and palatable.

Effect of dry ginger is seen both on stomach-intestines (Jatharagni) and at tissue level (Dhatvagni).
